satisfaction absolutely guaranteed (unless you don't like avocado or cilantro)

Primarily eaten as salsa, but also enjoyed as an everyday salad, try this recipe and I guarantee you'll never be the same!

Cowboy Salsa:

1 Can of black-eyed peas (thoroughly rinsed)
1 Can of Corn niblets (drained)
2/3 c. chopped cilantro
2/3 c. chopped green onion
1 c. chopped tomato
2 c. cubed avocado

Dressing:
1/4 c. olive oil
1/4 c. red wine vinegar
3/4 tsp. salt
1/8 tsp cumin

Mix ingredients in large bowl, adding dressing last and mix well. Chill in refrigerator at least 2 hours before serving. YUMMO!

Ah. I make something like this without a dressing, just lime juice. I'll have to try it this way. thanks for the recipe!

And, WHO doesn't like avocado and cilantro??!! They're like my two main foodgroups.

This sounds good...but way too domstic for me to make:) fresh cilantro??? Do you by any chance live in a metro where you have access to such specialties as this rather than having to do with what you can find at deans or super value??? just kidding. Next time I visit I'll make a "special request" that you make this salsa for me...how does that sound??? Hope you're doing well. I'm keeping up with the running but did my own 6 mile race sat rather than pay $20 to run by myself at turtlefest, which I wish I woulda done after looking at the times int the paper-I coulda placed in the top 10 for sure...oh well. See you in a few weeks at the renunion. Sorry for the book:) Heather

This is my favorite and I too am craving it right now! Zac doesn't really like Cilantro, but he loved this salsa when he had it the other night at the picnic! I will definitely be making it soon, can't wait!

I made this salsa tonight and the cookies. Yummy is a huge understatement. I grow cilantro in my garden and snipped some off to add to it and we ate the whole huge bowl. Thanks for sharing. I'll be making this many times.
The cookies were probably a little different from yours as I used soy butter and no m&m's. My daughter's both have peanut allergies. I wish I could use the m&m's but it's too risky. The cookies were great but if you don't like soy butter you wouldn't be able to eat these because they tasted very much like soy. This was a great treat though and made a ton of cookies. I will be sharing it with my uncle who has Celiac disease (he can't have gluten) and without the flour it's perfect for him. :)
